World's Best Sweet Potato Pie

Ingredients 3 large sweet potatoes 5 large eggs, beaten 1 cup butter, melted 1 (12 fluid ounce) can evaporated milk 1 cup white sugar, or to taste

1 tablespoon all-purpose flour 1 teaspoon vanilla extract ½ teaspoon ground nutmeg ½ teaspoon baking powder ½ teaspoon lemon juice 3 (9-inch) pie shells, thawed

Directions Cover sweet potatoes with water in a big pot and boil. Reduce heat to medium-low and simmer 40–50 minutes until tender. Drain water, peel, and mash sweet potatoes in a large bowl until smooth.  

Preheat the oven to 425 degrees F (220 degrees C).

Beat eggs and melted butter in a medium basin until thoroughly mixed; fold into mashed sweet potatoes. Smoothly combine milk, sugar, flour, vanilla, nutmeg, baking powder, and lemon juice; pour into pie shells.  

Bake pies for 10 minutes in preheated oven. Lower oven temperature to 350 degrees F (175 degrees C) and bake pie until a toothpick inserted into the center comes out clean, about 40 minutes more. After 15–30 minutes, refrigerate pies for 1–2 hours to finish cooling.
