Sweet Harmony Sweet Potato Pie 

Ingredients: – 2 cups mashed sweet potatoes (about 3-4 medium sweet potatoes) – 1/2 cup granulated sugar – 1/2 cup packed brown sugar – 1/2 cup evaporated milk – 2 eggs, beaten

– 1/4 cup unsalted butter, melted – 1 teaspoon vanilla extract – 1/2 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg – 1/4 teaspoon ground ginger – 1/4 teaspoon salt – 1 unbaked 9-inch pie crust

Instructions: 1. Preheat Oven: Preheat your oven to 350°F (175°C).

Prepare Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into chunks and boil them in water until they are soft. Drain and mash them in a bowl until smooth. Measure out 2 cups of mashed sweet potatoes. 

Mix Ingredients: In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, beaten eggs, melted butter, vanilla extract, cinnamon, nutmeg, ginger, and salt.  

Fill Pie Crust: Place the unbaked pie crust into a 9-inch pie dish. Pour the sweet potato mixture into the pie crust, smoothing it out evenly. 

Bake: Place the pie in the preheated oven and bake for 55-60 minutes, or until the filling is set and a knife inserted into the center comes out clean. 

Cool and Serve: Once baked, remove the pie from the oven and allow it to cool completely on a wire rack before slicing and serving.
