Keep Them Cool: Potatoes should be stored in a cool location, ideally between 45°F and 55°F (7°C and 13°C). Avoid storing them in the refrigerator, as the cold temperatures can convert the potato starches into sugars, affecting their taste and texture. 

Keep Them Dark: Potatoes should be stored in a dark place to prevent them from turning green. Exposure to light can cause potatoes to produce solanine, a compound that can be toxic in large amounts. Keep them in a pantry, cupboard, or cellar where they won't be exposed to light.
