Roasted Garlic Pasta

Ingredients: – 1 head of garlic – Olive oil – Salt and pepper – 8 ounces (225 grams) of pasta (such as spaghetti, fettuccine, or penne) – Fresh parsley, chopped (optional)

Preheat the Oven: – Preheat your oven to 400°F (200°C).

Prepare the Garlic: – Peel away the outer layers of the garlic head, leaving the cloves intact. – Use a sharp knife to slice off the top of the garlic head, exposing the cloves.

Roast the Garlic: – Place the garlic head on a piece of aluminum foil. – Drizzle the exposed cloves with olive oil and season with salt and pepper.

– Wrap the garlic head tightly in the foil and place it on a baking sheet. – Roast in the preheated oven for 30-40 minutes, or until the garlic cloves are soft and golden brown.

Cook the Pasta: – While the garlic is roasting, cook the pasta according to the package instructions until al dente. Drain and set aside.

Prepare the Garlic Paste: – Once the roasted garlic has cooled slightly, squeeze the cloves out of their skins into a small bowl. – Use a fork to mash the roasted garlic cloves into a paste.

Combine Pasta and Garlic Paste: – In a large skillet, heat a tablespoon of olive oil over medium heat. – Add the roasted garlic paste to the skillet and sauté for 1-2 minutes, until fragrant.

Serve: – Transfer the roasted garlic pasta to serving plates. – Garnish with chopped parsley and grated Parmesan cheese, if desired. – Serve hot and enjoy!
