Peach-Blackberry Pie

Ingredients: – 2 1/2 cups all-purpose flour – 1 cup unsalted butter, cold and cubed – 1/4 to 1/2 cup ice water – 4 cups sliced fresh peache – 2 cups fresh blackberrie

– 3/4 cup granulated sugar – 1/4 cup brown sugar – 1/4 cup cornstarch – 1 tablespoon lemon juice – 1 teaspoon vanilla extract – 1/2 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg – 1/4 teaspoon salt

Prepare Crust: Mix flour and butter until crumbly. Add ice water gradually until dough forms. Divide into 2 discs, chill. 

Make Filling: Combine peaches, blackberries, sugars, cornstarch, lemon juice, vanilla, spices, and salt. 

Assemble Pie: Roll out one dough disc, place in pie dish. Fill with fruit mixture. Dot with diced butter. Cover with second dough disc, seal edges, and vent top. 

Bake: Brush with egg wash. Bake at 400°F (200°C) for 45-50 min, until golden and bubbly. 

Serve: Cool before slicing. Enjoy a slice of this summer delight!
