Grilled Chicken and Mango Skewers 

Marinate Chicken: Cut boneless, skinless chicken breasts into bite-sized pieces. Marinate them in a mixture of olive oil, lime juice, minced garlic, salt, and pepper for at least 30 minutes to infuse flavor. 

Prepare Mango: Peel and dice ripe mangoes into chunks similar in size to the chicken pieces. Set aside. 

Preheat Grill: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. 

Assemble Skewers: Thread marinated chicken pieces and diced mango chunks onto skewers, alternating between the two ingredients for a colorful presentation. 

Grill Skewers: Place the assembled skewers on the preheated grill. Cook for about 5-7 minutes per side, or until the chicken is cooked through and the mangoes have slightly caramelized. 

Baste with Marinade: While grilling, brush the skewers with any remaining marinade to keep them moist and flavorful. 

Check for Doneness: Use a meat thermometer to ensure the internal temperature of the chicken reaches 165°F (74°C) before removing the skewers from the grill. 

Serve: Once cooked, transfer the grilled chicken and mango skewers to a serving platter. Garnish with chopped fresh cilantro or mint leaves for an extra burst of flavor. Serve hot and enjoy!
