Garlic Parmesan Smashed Potatoes

Ingredients 2-1/2 pounds small red potatoes 8 tablespoons olive oil, divided 1 cup grated Parmesan cheese 4 garlic cloves, minced

Directions Preheat oven to 450°. Cover potatoes in a large saucepan with water. Bring to boil. Lower heat and simmer uncovered for 15-20 minutes until tender. Drain.  

Drizzle 2 tablespoons oil over the bottom of a 15x10x1-in. baking pan; arrange potatoes over oil. Using the bottom of a glass or a potato masher, flatten potatoes to 1/2-in. thickness.

 In a small bowl, combine Parmesan, garlic and remaining 6 tablespoons olive oil; spoon over potatoes.

Roast until golden brown, 25-30 minutes.
