Easy Sweet Potato Pie

Ingredients 2 cups cooked and mashed sweet potatoes 2 eggs 1 ¼ cups evaporated milk ⅜ cup white sugar

½ teaspoon salt ½ teaspoon ground cinnamon ½ teaspoon ground nutmeg 2 tablespoons rum 4 tablespoons melted butter 1 (9 inch) unbaked pie crust

Directions Set oven temperature to 425 F (220 C).  

Add the sweet potatoes, eggs, butter or margarine, rum, sugar, salt, cinnamon, and nutmeg to a food processor. Process till smooth. Fill pie shell with mixture.  

Bake in a preheated oven for ten minutes. Lower the temperature to 150°C (300°F). Bake for a further fifty minutes, or until the filling is set.
