Cucumber and Hummus Boats

Prepare Cucumbers: Wash and dry English cucumbers. Slice them in half lengthwise, then use a spoon to scoop out the seeds, creating a hollow "boat" shape. 

Make Hummus: Prepare your favorite hummus recipe or use store-bought hummus. If making homemade hummus, blend chickpeas, tahini, lemon juice, garlic, olive oil, and salt until smooth and creamy. 

Fill Cucumber Boats: Spoon the hummus into the hollowed-out cucumbers, filling them generously with the creamy mixture. 

Chop Toppings: Chop fresh vegetables like cherry tomatoes, red onions, bell peppers, and cucumber into small pieces for topping the hummus boats. 

Top with Vegetables: Sprinkle the chopped vegetables over the hummus-filled cucumber boats, adding color, crunch, and freshness. 

Drizzle with Sauce (Optional): For extra flavor, drizzle the cucumber and hummus boats with a balsamic glaze, tahini sauce, or a squeeze of lemon juice. 

Season to Taste: Season the boats with a sprinkle of salt, pepper, and any additional herbs or spices of your choice for added flavor. 

Serve: Arrange the cucumber and hummus boats on a serving platter and garnish with fresh herbs like parsley, cilantro, or dill. Serve as a refreshing and nutritious appetizer or snack. Enjoy!
