Buttermilk Banana Cake

Ingredients: – 2 cups all-purpose flour – 1 teaspoon baking powder – 1 teaspoon baking soda – 1/2 teaspoon salt – 1/2 cup unsalted butter, softened

– 1 cup granulated sugar – 2 large egg – 1 teaspoon vanilla extract – 1 cup mashed ripe bananas (about 2 medium bananas) – 1/2 cup buttermilk – Optional: 1/2 cup chopped nuts (such as walnuts or pecans)

Preheat: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper for easy removal.

Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add Eggs and Vanilla: Beat in the eggs, one at a time, then add the vanilla extract, mixing until well combined.

Add Bananas: Mix in the mashed bananas until incorporated into the batter.

Alternate Mixing: Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined. Do not overmix.

Optional Nuts: If using nuts, gently fold them into the batter until evenly distributed. Pour Batter: Pour the batter into the prepared baking pan and spread it out evenly.

Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Once cooled, slice and serve. Optionally, you can dust the cake with powdered sugar or drizzle with a simple glaze.
