Blackened Tilapia with Zucchini Noodles 

Prepare Tilapia: Pat dry tilapia fillets and season both sides generously with blackening seasoning, coating the fish evenly. 

Prep Zucchini Noodles: Use a spiralizer to create zucchini noodles from fresh zucchini, or purchase pre-spiralized zucchini noodles from the store for convenience. 

Heat Skillet: Heat a skillet over medium-high heat and add a small amount of olive oil or butter to prevent sticking. 

Cook Tilapia: Once the skillet is hot, add the seasoned tilapia fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and blackened on the outside. 

Sauté Zucchini Noodles: In a separate skillet, heat a bit of olive oil over medium heat. Add the zucchini noodles and sauté for 2-3 minutes, or until they are tender but still crisp. 

Season Zoodles: Season the zucchini noodles with salt, pepper, and any additional desired seasonings, such as garlic powder or red pepper flakes, to taste. 

Plate: Divide the cooked zucchini noodles onto plates and top with the blackened tilapia fillets. 

Garnish and Serve: Garnish the dish with fresh chopped parsley or cilantro, a squeeze of lemon juice, and additional blackening seasoning if desired. Serve hot and enjoy your flavorful blackened tilapia with zucchini noodles!
